Tips for cooking with cheese:

  1. When cooking with cheese, be mindful of high temperatures which may cause them to toughen or curdle. Hard cheeses can tolerate higher heats, but it's better to use a low or indirect heat as a precaution.
  2. The best way to broil foods with cheese toppings is to keep the pan 4 to 6 inches from the heat, at least until the cheese has begun to melt.
  3. When shredding or grating, choose a semi soft or hard cheese and keep it cold to make the process easier. When wishing to spoon or spread as part of a recipe, soft cheese is always a better option.
