Asparagus Salad with Blue Cheese Dressing

Ingredients

  • 75g Tasmanian Heritage Blue Opal cheese
  • 1 bunch asparagus, trimmed
  • ¼ cup water
  • 4 slices red onion, separated into rings
  • 1 baby cos lettuce, separated into leaves
  • ¼ cup sour cream
  • 1 tablespoon mayonnaise
  • 2 tablespoons milk
  • 1 tablespoon white wine vinegar
  • Salt and pepper, to taste
  • ¼ cup continental parsley leaves

Instructions

  1. Place asparagus and water in a frypan and simmer for 3-5 minutes until just tender.
  2. Drain and refresh under cold water.
  3. Coat with a little olive oil.
  4. Arrange lettuce leaves, asparagus and onion rings on a serving platter.
  5. Whisk blue cheese, sour cream, mayonnaise, milk and vinegar together and season to taste.
  6. Drizzle over salad and sprinkle with parsley leaves.
