Baked Potatoes with Blue Cheese


  • 4 Large washed white potatoes
  • 150g Tasmanian Heritage Classic Blue, cut into wedges
  • 4 Smoked Bacon rashers, cut into thin slices, pan fried
  • 2 Thyme sprigs, chopped
  • 2 Spring onions, finely sliced
  • Olive oil
  • Salt and Pepper to taste


  1. Bake the potatoes until cooked and allow to cool slightly.
  2. Cut in half, scoop out the potato into a bowl. 
  3. Reserve half of the cheese and add everything else in with the potato and mix thoroughly. 
  4. Fill the potatoes with the mix, place the cheese on top, drizzle with olive oil and place in a moderate oven (180 degrees) for approx 15 minutes.
