Baked Potatoes with Blue Cheese
Ingredients
4 Large washed white potatoes
150g Tasmanian Heritage Classic Blue, cut into wedges
4 Smoked Bacon rashers, cut into thin slices, pan fried
2 Thyme sprigs, chopped
2 Spring onions, finely sliced
Olive oil
Salt and Pepper to taste
Instructions
- Bake the potatoes until cooked and allow to cool slightly.
- Cut in half, scoop out the potato into a bowl.
- Reserve half of the cheese and add everything else in with the potato and mix thoroughly.
- Fill the potatoes with the mix, place the cheese on top, drizzle with olive oil and place in a moderate oven (180 degrees) for approx 15 minutes.
