Blue Cheese Omelette
Ingredients
140g Tasmanian Heritage Deep Blue, roughly crumbled
2 eggs
100g mushrooms
Several chives, chopped
Salt and cracked pepper, to taste
1 bunch of chive & mint mix
Instructions
- Sauté chopped mushrooms in a greased flameproof frying pan until soft, and set aside.
- Re-grease the pan and set over low heat. Turn on grill.
- Season 2 fresh eggs with salt and freshly ground black pepper, and whisk lightly.
- Fold in the crumbled Tasmanian Heritage Deep Blue, the cooked mushrooms and chopped chives.
- Add the mixture to the heated frying pan, and gently distribute about the pan until almost set.
- Place under a grill and gently brown the omelette top. Serve immediately.
