Tasmanian Heritage Deep Blue

Ingredients

140g Tasmanian Heritage Deep Blue, roughly crumbled
2 eggs
100g mushrooms
Several chives, chopped
Salt and cracked pepper, to taste
1 bunch of chive & mint mix

Instructions

  1. Sauté chopped mushrooms in a greased flameproof frying pan until soft, and set aside.
  2. Re-grease the pan and set over low heat. Turn on grill. 
  3. Season 2 fresh eggs with salt and freshly ground black pepper, and whisk lightly. 
  4. Fold in the crumbled Tasmanian Heritage Deep Blue, the cooked mushrooms and chopped chives. 
  5. Add the mixture to the heated frying pan, and gently distribute about the pan until almost set. 
  6. Place under a grill and gently brown the omelette top. Serve immediately.
