Tasmanian Heritage White Pearl

Ingredients

125g Tasmanian Heritage White Pearl cheese, very ripe with rind removed
500ml milk full cream
125ml cream
4 egg yolks
1 whole egg
90g caster sugar

Instructions

  1. Bring the milk & double cream to the boil
  2. Whisk the egg yolks, egg & sugar in a bowl together until pale & creamy 
  3. Pour in the hot liquid and return to the heat to thicken the mixture. Be careful not to overcook and avoid 'scrambled eggs'; thicken just enough to coat the back of a spoon 
  4. Add the Tasmanian Heritage White Pearl Cheese and melt, then blend with a stick blender before passing the mixture through a fine sieve.
  5. Chill & pour into ice cream maker according to instructions until frozen.
  6. Serve in a high fluted glass with your favourite sauce
