Spiced Date and Walnut Muffins with Camembert


  • 250g Camembert, thickly sliced
  • 1 egg, lightly beaten
  • 125g butter, melted
  • 1 cup milk
  • 2 cups SR flour
  • 1 cup brown sugar
  • 1 teaspoon mixed spice
  • 1 cup chopped dates or prunes
  • 1/3 cup chopped walnuts or pecans



  1. Whisk egg, butter and milk together in a jug.
  2. Combine flour, sugar, spice, dates and walnuts in a bowl, make a well in the centre and mix in milk mixture until combined.
  3. Spoon into 12 buttered muffin pans and bake at 190°C for 15-20 minutes.
  4. Turn out onto a wire rack to cool. Make a diagonal cut into the top of each muffin and insert a slice of Camembert.
  5. Serve for morning or afternoon tea.
