White Diamond and Salmon Tartlets


  • 200g Tasmanian Heritage White Diamond
  • 300g smoked salmon
  • baby capers
  • sliced onion
  • 3 sheets prepared puff pastry


  1. Line a mini-muffin tin with squares cut from pre-prepared puff pastry sheets to form individual cups, and trim edges.
  2. Add a generous piece of smoked salmon, baby capers and sliced onion to each cup. 
  3. Top with a slice of Tasmanian Heritage White Diamond. 
  4. Cook in a moderate pre-heated oven for 10-15 minutes or until golden brown. 
  5. Garnish with shallots and a wedge of lime.
