Soft white cheese is also known as soft ripened or surface ripened cheese, as the cheese matures from the outer rind to the centre, developing their characteristic flavours over time due to the enzymes and cultures in the cheese. Soft white cheeses are encased with a velvety white mould and have a creamy golden interior. While the texture and taste can vary, soft white cheeses are generally smooth and creamy, varying from a very buttery to a pronounced mushroom character that develops as the cheese matures.
Historically, the differences between a brie and a camembert were due to the different regions in France in which they were produced. Brie was originally produced in an area south-east of Paris and made in a large flat wheel, while camembert originated in Normandy and was made in a small high cylinder. Generally speaking today, brie is a smoother, creamier cheese with a mushroom taste and camembert has a nuttier and slightly sweeter flavour.
