Description:
Tasmanian Heritage Red Square is a sumptuous traditional washed rind cheese with a mild earthy aroma and a lingering creamy taste. Upon maturation, the interior of the slightly sticky and pungent orange rind reveals a glossy custard-like centre which offers a surprisingly mild yet pronounced robust flavour. As with all washed rinds Red Square smells much stronger than it tastes.
Suggested Accompaniment:
Tasmanian Heritage Red Square should be savoured with fresh figs, poached pear, dried or glacé peach and apricots or pecan nuts accompanied by water crackers or a crusty baguette.
General Serving/ Storage comments:
To allow for optimal flavour and enjoyment, it is recommended that the cheese is removed from the fridge 60 minutes before serving. This time may vary depending on the temperature and humidity of the day. Once opened, wrap any remaining cheese in the original packaging to maintain optimum quality. Always serve cheese when it is most ripe (ie. as close to its best before date as possible) to ensure a full flavour and optimum taste. If the cheese is unripe, it should be left in the refrigerator to mature.
